MONTHLY RECIPE HIGHLIGHT

creamy chicken + gnocchi

  • 2# chicken breast
  • 2T olive oil
  • 1 shallot, diced
  • 8oz baby bella mushrooms, sliced
  • 2 cloves garlic
  • 2t thyme
  • 1t oregano
  • red pepper flakes
  • 1c chicken stock
  • 1 lemon, juiced (optional)
  • 1.5c half + half (or cream)
  • 1/2c parmesan cheese
  • 1 package gnocchi
  • 3c baby spinach
  • salt + pepper

ingredients

  • 2# chicken breast
  • 2T olive oil
  • 1 shallot, diced
  • 8oz baby bella mushrooms, sliced

  • 2t thyme
  • 1t oregano
  • red pepper flakes
  • 1c chicken stock
  • 1 lemon, juiced (optional)
  • 1.5c half + half (or cream)
  • 1/2c parmesan cheese
  • 1 package gnocchi
  • 3c baby spinach
  • salt + pepper

Directions

  • season chicken with s+p. in a large skillet, heat 1T oil over medium-high heat. add chicken + cook until golden, approximately 4 minutes per side. remove from skillet.
  • reduce heat to medium. add 1T oil, shallot + mushroom. cook until golden, approximately 5 minutes. add garlic, thyme + oregano.
  • add stock + lemon juice. scrape any brown bits on bottom of pan into sauce. slowly add half + half. bring to a simmer. season with s+p and add a pinch of red pepper flakes.
  • stir in gnocchi and return chicken to pan. simmer until chicken is cooked through (165º internally), approximately 8-10 minutes. stir occasionally. remove chicken from skillet.
  • add cheese, stir until melted. add spinach, stir until wilted.
  • slice chicken and return to skillet. season with s+p as needed.

ideas + serving

  • serve while warm with a side or Caesar salad + garlic bread, if desired.
  • add 1/4c of white wine with step #2 to add some additional flavor.

everyday journaling prompts

I know you’ve heard about the importance of a morning routine and starting your day off right. When you begin the day focused on personal growth, you send a message that spending time on yourself is important. You’ll be confident, motivated, and ready to tackle whatever the rest of the day throws your way.

Many people would love to start journaling, but that they just don’t know what to write. Should you write about your day? Is it like a diary entry? Or, is journaling for setting goals and making lists? The good news, is that there’s no right or wrong way.

patriotic popsicles

We have a big opportunity to show gratitude for those that gave their lives for our freedom and to celebrate this great country. If you’re looking for a fun way to show some patriotism as you enjoy those Memorial Day BBQs, I have a quick and easy recipe to keep you cool. Bonus, this recipe is easy for kids  to make and definitely enjoy!

ingredients + supplies

  • silicone popsicle molds or store-bought disposable cups + popsicle sticks
  • 1c greek yogurt (sub dairy free option if needed)
  • 1/2c blueberries
  • 1c strawberries
  • honey or maple syrup, if desired

directions

  • if you’d like to add a star to the bottom of your popsicles, take a small pan or plate (freezer-safe) and spread yogurt in desired thickness.
  • while yogurt is freezing, puree blueberries. and puree strawberries, keeping both separate.
  • once partially frozen, cut stars from yogurt and add to bottom of popsicle molds or cups.
  • layer popsicles as desired for a fun layered finish:
    • blueberry puree
    • yogurt (sweeten with honey or syrup, if desired)
    • strawberry puree
  • note: for crisp lines between layers, partially freeze in between layers as needed.

Meet My Mom

Mothers Day is such a special time to honor the women in our lives, although if we’re being honest, they deserve to be honored year-round!

This is my mom, Karen. She’s a mother to 3 and grandma to 10! My favorite thing about her is how selfless she is. She’s also hard working and strong, and fights hard for things she loves most. She has an incredible talent for quilting and makes the world’s best sugar cookies for every occasion possible!

She lost her Mom when she was way too young, leaving a place in her heart that will never be filled. I don’t know how she’s grown to be so amazing without her mom to lean on, but she has. It makes me ever-so-grateful to share every special event with her. I know life is fragile and I don’t want to take that for granted.

Happy Mother’s Day, Mom! I love you!
